    The Roquefort, French gastronomy ambassador, embodies the taste, the truth, and the excellence.

    Step 1 – Roquefort Société Cellars

    To see and know everything about this cheese of international renown, go down a few steps underground, within the Combalou scree, to discover the mysteries of the “fleurines” and the cheese maturers’ secrets. Discover the origin of the Roquefort Société Cellars formation with a 3D projection, then move on in front of those fissures, called “fleurines” and feel the natural breeze that ventilates the cellars.

    Go off to discover the Lacaune ewes on the Causses path. From the milking to the transformation of the milk into cheese, a movie recounts every step of the Roquefort AOP Société production. Go inside Société Cellars in which takes place the transformation of cheese loaves into Roquefort AOP through contact with stone and woods. The loaves’ aging happens under the watchful and wise eye of Société master cheese ripener.

    The visit is reaching its end. Your guide offers you to discover and taste the three different Roquefort AOP Société. Finally, a showroom lets you relive the Société 160-years history.

    Step 2 – The gourmet moment

    Gourmet break for lunch with the majestic setting of the Reynès Cellar’s vaults or on the terrace in front of the Cirque de Tournemire. The cooking is homemade with local and fresh products. Of course, the spotlight is on the Roquefort, in every shape and form.

    Step 3 – Welcome to Alice’s “caussenarde” Farm

    A visit to the Hermilix Farm or to discover a “lavogne”, is an opportunity to experience the rural world behind our landscapes that are now registered on the UNESCO World Heritage List. Be far from clichés and received ideas, Alice shares the passion of her job, Lacaune ewes. Not only you will be welcomed with a splendid setting of “Les Grands Causses”, but also you will have the opportunity to discover an ewe farm who’s the milk is exclusively used for the Roquefort. Because even if the aging of the cheese within cellars is a Roquefort particularity, we must not forget that it is exclusively ewe Lacaune unpasteurised cheese. And if you still need to be convinced to stop by Alice’s, you ought to know that every farm visit ends with a relaxation and testing moment in a nice, vaulted room. Alice initiates you into the different Roquefort flavours and the ewe’s milk homemade sweet specialty: the famous “flaune” (an ewe’s milk cake orange blossom water-flavoured). Pure delight!

    Touch an ewe, smell farm odours, taste the Alice’s legendary “flaune” and just, savour the moment.

    ALTERNATIVE 2 DAYS / 1 NIGHT

    In the morning, after a good breakfast, put your hiking shoes on and go for 3 hours and 7.8 km to discover Le Sentier des Echelles in the footsteps of pastoral life in days gone by. At one time, an employee of the Mas de Roquefort Farm brought a meal to the shepherd who grazed his ewes on the Combalou plateau. He took a shortcut through two ladders on a cliffside.

    These days, to reach the plateau, you need to climb (an elevation gain of 532 m) by following the track which crosses the scree at the bottom of the cliff. When you are at the top, admire the view that lies before you!

    Wander all the Combalou plateau with beautiful viewing points on the village of Roquefort and the Larzac plateau. On your way, you will be delighted to gaze at the Combalou famous “jasse”.

    When you are on the other side of the plateau, a stop must be made to enjoy the view on the Cirque du Brias of Tournemire. Finally, make it slowly to the village by walking along the path at the foot of the cliff for a last stop: the viewpoint indicator and a beautiful outlook on the village of Roquefort.
